4 chicken thighs
Olive oil or coconut oil
5 tbsp soy sauce
5 tbsp cider
1-2 tbsp tomato puree or ketchup
1-2 tsp mustard
1 tbsp sugar or maple syrup
1 garlic clove, crushed
- Heat oven to 180C
- Rub oil over chicken pieces & season with pepper (no salt needed as soy sauce will do the job)
- Cook in oven for 25-30 minutes
- Mix together remaining ingredients in a measuring jug to make sauce (whisk with a fork to blend)
- Remove chicken from oven
- Pour sauce around chicken pieces and put back in oven for further 25-30 minutes, until thoroughly cooked. Don’t pour the sauce on top of the chicken pieces as it will burn!
Serve with wild rice, seasoned with butter, salt and pepper to taste and a large mixed salad.
